Réal is a tribute to the cellar masters of the 19th century, whose traditions have
been partially abandoned as champagne making has grown more commercial and
maximising profit has become the top priority. At the end of the 19th century,
English buyers altered the taste of champagne from the original flavour to what
today's champagne tastes like. As a result, up to 85 % of today's champagnes are
still of the English-influenced type (brut).
We feel that making champagne is an art form and that the quality of the final
product must be our highest priority. Once the work is completed, we will think
about where to sell the champagne – not the other way around.
Réal's character is a mixture of the traditions we have learned about, thorough
research work and the knowledge of the cellar masters. Réal tastes more pure than
any champagne we have tasted so far. You can taste a hint of lemon, crystal-clear
freshness and mountain winds.
RÉAL
SAINT SIMON
Located in Bethon, Saint Simon is a new champagne house that promises to shake
up the champagne world, with style.
A new champagne from the old world. “We wanted to bring this champagne recipe
up like a lost ship from the bottom of the sea and serve bottled authenticity to wine
lovers in the form of champagne, the most prestigious wine in the world.” – Pablo
David
“Our goal is to increase champagne's value and appreciation among wine
enthusiasts.” – Ansver Oksman
The reason we felt the need to found this new champagne house was, in the end,
that both we and many French wine purists felt that some of champagne's prestige
and authenticity as well as the public's awareness of champagne had decreased. We
felt that the only way to realize the purists' vision was to start from scratch and
found a new champagne house.
Despite a rocky start, we managed to get the permits required to found a new
champagne house, and we are now ready to launch our first product, called Réal.
